Almond Nibs Biscuit Recipe

If you like almond and crispy type of biscuit, you will like this recipe. This is a very easy recipe with very simple ingredients. Do this especially when you have left over egg white as this recipe calls only for egg white without egg yolk. I will share the recipe with one egg white, just multiply the recipe with number of egg white if you want to do more.

 

6 Days 5 Nights Relax at Chiang Mai (Day 1) | 废人废生活的清迈6天5夜行 (第一天)

Day 1 With Thai Airway, we fly at 8:10am early morning from Penang, arrived and transit Bangkok at 8:50am. Fly from Bangkok at 10:40am, we had arrived Chiang Mai at 11:50am. The total flight journey including transit time just took us about 5 hours, compare with Air Asia, longer time spent for transiting is actually a big waste. This is also another reason why we chosen Thai Airway. 第一天 我们乘搭泰航,早上八点十分的班机从槟城飞往曼谷,抵达时间为八点五十分。再乘搭十点四十分的班机转机飞往清迈,抵达时间是十一点五十分。槟城与清迈时差是一个小时。以短短的五个小时我们就能顺利抵达清迈。这也是我们选择泰航的其中一个原因。   By the time we touched down at Chiang Mai, taxi driver that we reserved through hotel already waited us at Airport. We quickly grab a free phone sim card and local map, then proceed to our first hotel, Baannamping. On the way to hotel, taxi driver dropped us at local market to buy some fruits, cup noodles and junk food. 当我们抵达清迈机场,司机已经正在等待迎接我们。我们快速的取了当地免费电话卡及地图,就前往Baannamping住宿。途中,我们请求司机停放我们在当地巴刹,购买些水果。我们买了三包各20Baht的水果,准备回旅馆享用。再到隔壁的Tesco Lotus Express买些杯面及零食,就回到旅馆。 Fruits, junk foods and cup noodles After checked in to hotel, we had our lunch at hotel's restaurant. The meals are not as cheap as what we had expected. A plate of fried noodle Pad Thai is 150Baht, fried rice is 150Baht, apple juice is 85Baht. For taste wise, fried rice is the best, although it does not look attractive and portion is very small, but it really tastes superb. Pad Thai is their local food with sweet and salty taste. The noodle is actually thin version of our koay teow. We expect for fresh apple juice, but it was just a juice from box packet. 抵达旅馆放下包包后,我们就到他们的食堂用午餐。打开菜谱,发觉价钱并没有想象中便宜。以为一盘饭面只需50Baht左右,但并非如此。由于肚子已在打鼓,所以就点了一盘炒饭150Baht,一盘炒面Pad Thai 150Baht,及一杯苹果汁85Baht。 等了一片刻,食物终于送上,果汁有点让我失望,原以为是新鲜果汁,但其实是盒装倒出来的。炒面是当地的食物,带点咸及甜味,觉得很不错。但,最令人难以忘怀的是炒饭,看下去白白的并没什么特别,但味道超好,超香。只可惜分量太少了,想再来多一盘又觉得有点贵。就这样吃完了我们清迈的第一餐。 Apple juice Fried rice Pad thai After meal, we returned to our hotel room, started enjoy our free and easy life. After rest, we borrowed motor bike from hotel to Baan Tawai Village. This place sells many wood products and we like those wooden product so much. If you like wooden product, this is the right place for you! 吃饱后,我们回房休息,开始废了起来,这无忧无虑的感觉真好。废够后,我们向工作人员借了电单车,问了方向后,就到附近的Baan Tawai Village瞎逛。途中不知正确位置,就询问当地居民,他都很乐意的为我们指明方向。没多久,我们抵达目的地,当地所卖的木制物品,比我们想象的还多,只可惜很多都是带不回的,比如座椅橱柜等等,但也有些小样物品,就如灯,装饰品,礼品,服装等。我们购买了木制吊饰品,80Baht一个以作为纪念。   The shops at Baan Tawai closed at 5pm. After shopping, we went to night market near to our hotel. It is a small night market but there are plenty types of food. Foods are cheap and delicious too. Papaya salad 25Baht, fried port skin 20Baht, pork ball 10Baht for 10pcs, fried "yao zha kuay" and pandan custard 13Baht, egg tart15Baht, crispy hat biscuit 10Baht, sago dessert 5Baht. We returned to hotel to enjoy the foods we bought, we liked most of them such as the appetizing papaya salad. We faced some difficultly when purchased papaya salad, we do not understand their language and want to ask them the price for papaya salad, we asked the aunty "How Much?", she did not understand us at all, and pointed us what they sell. I looked at the menu and point at number "25", she knocked her head, from there we guess it is 25 baht. Although we faced communication problem, but their help and positive attitude had warm our heart. Unlike many other places, when you ask and nego for price, but in the end you decided not to buy, you will get scold by the shop owner, but we did not see this happen in Chiang Mai. 逛了没多久,差不多傍晚五点,店铺开始关闭了。我们前往当地的巴刹购买晚餐。由于第一次逛当地夜市,看见当地的食物,即便宜,看试又美味,所以很兴奋地,买了一样又一样。当中有木瓜沙拉25Baht,炸猪皮20Baht,猪肉丸10Baht10粒,油条和Pandan Custard 13Baht,蛋塔15Baht,香脆帽子饼10Baht,沙谷甜品5Baht,及水。看,都很便宜吧?买完后,我们回到酒店享用晚餐。木瓜沙拉超好吃,是由青木瓜,红番茄,青茄子等,再加上各种调味品所调出来的。酸酸甜甜非常开胃。还记得我们买沙拉时,问他们"How Much?",他们完全听不明白我们问什么,只在比手画脚告诉我们她在卖什么,后来是看到牌上的价钱表,随便指一指才能让她明白。虽然语言完全不通,但他们用心来明白我们的疑问,及路人的乐心帮忙,温软了我们的心。至于其他的小贩,也是非常的友善,态度非常好,当你提问问题,或者购买东西时,他们都是以微笑来对待你。不只如此,就算问了不买,他们也OkOk笑笑回应你,并不会给你脸色看,和香港人实在是天地之差呢。吃完晚餐,我们继续废,就这样过了清迈的第一天。 Market near Baan Namping Fried "yao zha kuay" and pandan custard Crispy hat biscuit Our dinner Milk tea

 

Japan Mini Red Apple | 日本ミニりんご

I saw a very cute mini red apple when I am shopping in OIOI shopping complex last weekend. I was looking for various kind of fruits at that time and unexpectedly I saw those mini apples. I was so excited and thinking to buy it but at the end I walked back with empty hands as we were too hungry and rushing for dinner. I was regretted for not buying the mini apples and keep thinking on the cute apple for few days. 

 

Butter Cake Recipe (Egg Separation Method)

Butter cake is one of my family favourite cake, I used to bake it years ago with "Buttercup" or "Farmcow" butter. This few years, I found it hard to bake nice butter cake with this types of butter. I am not sure what's wrong with it, it was either my baking skill get worse? or the weather that makes the buttle melt easily? or the butter itself? I bought a 500g better quality butter to keep in fridge and plan to bake for butter cake. This time I get "SCS" butter. When I read through some bloggers' blog, I found one recipe that is famous among many bloggers, and this method using egg separation method. I decided to give it a try. With no regret, I am very happy with the result, I like this type of cake which gives a very fluffy texture and rich in buttery flavour. Thanks to wendyinkk for sharing Mrs NgSK's recipe. I really love it so much!!! Ingredients:230g salted butter, softened150g caster sugar4 egg yolks (grade B egg)200g self raising flour, sifted (I used 200g cake flour+3.5tsp baking powder)60ml fresh milk 4 egg whites (grade B egg)50g caster sugar Method:1. Preheat oven to 170°C. Line bottom and sides of 8 inch cake pan with parchment paper. 2. Cream butter and sugar till pale and fluffy, scrape side and bottom of mixing bowl as necessary. Add egg yolk 1 at a time. Beat well after each addition. 3. Put half the sifted flour and mix on low speed until combined. Add milk in two additions and mix until well combined. Add in balance of flour. 4. In a separate mixing bowl, whisk egg whites till soft peak. Gradually add in 50 g sugar, beat until egg whites form stiff peaks. 5. Put half the egg whites in butter mixture and mix on low speed, pour in balance of egg whites and fold with spatula. 6. Pour batter into baking pan and level.7. Bang baking pan on table top to remove big air bubbles.8. Bake at pre-heated oven for 45 minutes or until skewer inserted and come out clean. My cake has little crack on top when bake in oven for about 40 minutes, I don't really care about this as most importantly it was very delicious, look at the photo to see the cake's texture, lovely! Speg_3Years! It has been years I never touch on spaghetti, never walk into Italian restaurant (except for pizza). I am phobia to spaghetti after went for Italian buffet in Japan in year 2009, the Italian buffet came with free flow of pizza and spaghetti, somehow I guess I ate too much of spaghetti, and that caused me stop spaghetti for 5 years!

Last week, sitting in office, I suddenly smeeeell spaghetti (my brain pop out spaghetti)...then feel like eating the spaghetti that Camus cooked for me about 7 or 8 years ago. Last weekend, he cooked for me again using the same recipe.

See below for the ingredients and recipe, simple yet delicious!

To cook the sauce, fried garlic and onion in pan, when both ingredients almost golden brown, pour in a can of Campbell mushroom soup, add half can of water and stir well. Add in dried mushroom which has been cut into slices after soak in water until soft. Boil everything and add in a slice of cheedar cheese. Stir evenly.

In separate pan, cook corn, crab stick and beef breakfast lean.

Cook spaghetti in boiling water until it is soft. When everything is done, serve spaghetti with mushroom sauce on plate, add corn, crab stick and beef breakfast lean. Serve hot!

Now while I am writing the post, I wish to eat another plate of spaghetti again. Next time, maybe I want to have a plate of carbonara spaghetti. Last but not least, thanks my dear for this very delicious spaghetti!

With no regret, I am very happy with the result, I like this type of cake which gives a very fluffy texture and rich in buttery flavour. Thanks to wendyinkk for sharing Mrs NgSK's recipe. I really love it so much!!!

Ingredients:
230g salted butter, softened
150g caster sugar
4 egg yolks (grade B egg)
200g self raising flour, sifted (I used 200g cake flour+3.5tsp baking powder)
60ml fresh milk

4 egg whites (grade B egg)
50g caster sugar

Method:
1. Preheat oven to 170°C. Line bottom and sides of 8 inch cake pan with parchment paper.
2. Cream butter and sugar till pale and fluffy, scrape side and bottom of mixing bowl as necessary. Add egg yolk 1 at a time. Beat well after each addition.

8. Bake at pre-heated oven for 45 minutes or until skewer inserted and come out clean.

My cake has little crack on top when bake in oven for about 40 minutes, I don't really care about this as most importantly it was very delicious, look at the photo to see the cake's texture, lovely!

CranLC_1When I looked back my post on Hawflakes Layer Cake, I just realised that it has been more than one year since I last baked my Indonesia layer cake. I bought a can of butter for baking layer cake and kept until it was expired. I quickly grab it to bake for my next Indonesia Layer Cake with Cranberry.

This time, I follow exactly the recipe in my blog too, with slight modification, I change the filling to cranberries. For my hawflakes and prune layer cake, I managed to bake a total of 8 layers cake but for this one, I get only 7 layers. It was still very delicious and as good as last two cakes! I spent less than 3 hours for this cake. You can substitude cranberries with raisins too if you like as the taste of cranberries in this cake taste very similar to raisins.

Ingredients:
340g tinned butter
180g icing sugar (sifted)
1tbsp sweet condensed milk

12 egg yolk
1/2tsp vanilla essense
1tbsp brandy (optional)

100g plain flour (sifted together with mixed spice)
1.5tsp mixed spice

4 egg white

Some cranberry and red colouring

Method:

1. Cream butter and icing sugar with mixer (using k-beater) at medium speed until fluffy. Add in sweet condensed milk and continue cream until well combined.
2. In separate bowl, beat egg yolks, brandy and vanilla essense with handwhisk until pale.
3. Continue mixer at medium speed (step 1), slowly pour egg yolks into butter mixture and cream until well combined.
4. Switch mixer to low speed, add in sifted flour and mixed spice, beat until well combined.
5. In separate big bowl, beat egg white until very hard.
6. Scoop 3~5 tbsp of mixture (4) into beaten egg white, stir with spoon until combined.
7. Add (6) into remaining (4) mixture and mix at low speed until well combined.

To bake:
1. Preheat oven at 200C (TOP & BOTTOM fire).
2. Line square cake tin bottom layer with baking paper. Oil the paper to hold it well with cake tin.
3. Pour one cup of mixture into cake tin, make the layer even with spatula.
4. Bake at oven until top layer is brown. (about 6~8 minutes depend on oven)
5. When done for first layer, take out from oven, switch oven to TOP fire only. Poke cake's bubble with toothpick (if any).
6. Pour another cup of mixture to make second layer.
7. Repeat step (3) ~ (4) until second last layer, switch oven to TOP & BOTTOM fire, 180C.
8. Continue to bake last layer until brown.
9. Remove cake from oven and cool it at wire rack.

*Note1: Arrange cranberries at 3rd & 6th layer. Press lightly with toothpick after pour 3rd and 6th layer mixture.

*Note2: Take out 2 cups of mixture and add a few drops of red colouring, mix well. Pour 1 cup of red mixture on 2nd and 6th layer of cake.

Steam Chicken with Mushroom Using Cosway Steamer PDF Print E-mail

SteamerRecently when we were doing house keeping, we found out that there is a unit of steamer given by Camus's mom. She bought it from Cosway many years ago but did not use it at all. We took it out from our store room and keep it at kicthen.

Last two weeks, we used it to cook for our lunch and dinner. We found it quite useful and easy to use without dirty our kicthen, hence not much cleaning job after cook except for washing the steamer part by part after use.

We first try with steam chicken with mushroon, the night before cook, we merinate two big chicken drumsticks with oyster sauce, soy sauce and pepper. To make the chicken more delicious, we added dried mushroom, red dates and ginger to the chicken on the day we cooked. Since the steamer contains three layers, we put in lady finger and corn too.

With this simple and easy cooking way, we were able to enjoy our meal, and it was so delicious.

HengThai_1We found one Chinese-Thai food restaurant few weeks ago at Raja Uda, it was not our first intention to dine there. We were hungry and looking for something good and special for our dinner, we went to Kampung Baru for our first stop, looking for Japanese food, but there was an event held at Kampung Baru causing heavy traffic jam.

We changed our dinner place to Salad Bowl at Chain Ferry, bad luck, it was closed on that day. We drove towards Raja Uda direction, Sawara steamboat get our attention and we sat in to read the menu. After 5 minutes, we walked out from Sawara due to super expensive of the meal. Finally, we went in this not so attractive but crowded restaurant.

It was already 9pm and after make order, still have to wait for another 25-30minutes. I can say that it was worth waiting as the dishes that we ordered taste delicious and very similar to Thai local taste.

That time was only Camus and myself, two persons cannot order much. One big fish, two big prawns and a plate of mix vegetable make us very full and satisfied.

This assam Africa fish taste superb, hot, spicy and sour, just like assam soup. It came with some chinese cabbage too, very appetizing. This assam big fish cost about RM28, to me it is very worth as you will get big fish with delicious soup and vegetable in it.

When make order, the waiter asked is 4 big prawns enough for us? We said yes, but after that, he reduce our order to 2 big prawns. I was thinking, har? 2 prawn nia where got enough? But for first time, I thought it would be good to try 2 first, in case not delicious. When they served, I was shocked as big head prawn really big in size, luckily we did not order 4, and this 2 big head prawn cost us RM40. Gosh! If I order 4, I have to pay for RM80!! This plate of big head prawns was super delicious, sprinkle with chopped garlic and bird chili on top. They steamed with a kind of sauce, slightly sour, very special and delicious, if you ask me how the big prawn taste, I can say it tasted like lobster and crab. How good if I have the recipe?

Mix vegetable, RM8 taste good too. They cooked with 4 types of vegetables.

To us, this is one of the best Thai food restaurant (another one is Mae Salong in Sungai Petani). They open during lunch time too. If you are looking for Thai food, visit this restaurant and give it a try.
