Yam Cake 芋头糕 (Or Kuih) Recipe

I miss my kitchen, I miss my oven, I miss my flour, miss my butter, my mixing bowl, and...and...and... every single little thing in my little kicthen...... I have no time to bake, no time to cook, no time for food hunting for the past few months. The only thing I can do is to surf and read on people's blog. Sometimes, blogging life is quite lonely if you are walking alone. Interaction with readers or other bloggers are the best way to keep us motivated.

6 Days 5 Nights Relax at Chiang Mai (Day 3) | 废人废生活的清迈6天5夜行 (第三天)

Day3 It was another beautiful day which no one, no alarm, no phone call woke you up from your sweet dream. We had our breakfast in hotel and continue rent hotel’s bike to Chiang Mai city. Our first stop was Doi Suthep. Doi Suthep, Chiang Mai University and Saturday market location map On the way to Doi Suthep Temple, we passed by Chiang Mai university. We turned in their Uni and look for their canteen. Many stalls were not open due to Saturday. Again, we used hand language to order our meal, then bought a cup of coconut drink. The foods at here also very cheap, 20 Baht for a bowl of noodle, 6 Baht for coconut drink. 6Baht。 Local noodle Drinks stall Coconut drink We continue our journey to Doi Suthep Temple. The way to the temple was terrible if you go with bike. We regretted not going with Song Thaew. The temple was very beautiful and worth visiting. City view on the way to Doi Suthep Doi Suthep Temple was built on mountain, entrance fee is 30Baht per person. Elevator is 20Baht per person. If you can walk, you no need to pay for 20Baht and can just walk up to the temple top through the stair case which consist more than 300 steps. 20Baht。 Doi Suthep temple Doi Suthep temple Doi Suthep temple We proceed to Saturday market at Wua Lai Road after Doi Suthep. Forgot to mention, along our journey, we do not hire tour guide nor driver. What guided us was GPS. While Camus riding on bike, I hold my phone on hand and read the direction from GPS. We were not worry about thief will snatch away our phone as we feel very safe in Chiang Mai. Although GPS is powerful, but we were not able to reach every location with it's help. We lost our way to Saturday market, we stopped by at road side to study the map. Suddenly there was a voice shouting towards us, "hello...hello...". I was shocked and thought we blocked someone way. When we turned our head, we saw a man with his wife asked us "Any help?". Yes, in the end we got our way to Saturday with their help. We appreciate and sincerely thank their kind help. There were various kind of foods sold in Saturday market, much more compare to night market near our hotel. We bought some foods to eat while shopping, suddenly all people stopped down, and those who seated stood up. I was surprise and shock as wonder what was happened. After few second, we heard their national song. It was 6pm at that time, everyday they will play national song and people will stand as a respect to their country. This scene did not appear to me for years in our country, what happened to our country Malaysia? 。。? Saturday market Saturday market Chiang Mai is a very clean and beautiful place. You can hardly see rubbish on floor. I remembered when I was in front of one of the stall which selling fried pork skin, the stall owner keep pointing on empty plastic bag hold in my hand, she wanted to throw it for me. From there I understand why there is no rubbish in their night market. Not only this stall, some of the stalls owner will point you the dustbin when they see you holding any rubbish on hand. Delicious thai food Cuttle fish Cuttle fish Various kind of pure fruit juice (10~30baht per bottle) Temple near to Saturday market Temple near to Saturday market We returned to hotel after get enough of foods. These conclude our third day in Chiang Mai.

6 Days 5 Nights Relax at Chiang Mai (Day 5) | 废人废生活的清迈6天5夜行 (第五天)

Day5 Breakfast in Baan Hanibah hotel. Today we joined one day trip to elephant show, 1400Baht each person, driver picked us in front of hotel. The package includes bamboo riding, elephant show, visit to long neck village, lunch, ride on oxford and elephant, visit to orchid and butterfly farm. Bamboo riding Every activity was very attractive to us except for visit to orchid and butterfly farm. We truly respect the elephants' trainers as their elephants are all very well trained. You will experience how elephant drawing with their long nose. Elephant show Long neck village is one of the famous spot in Chiang Mai. Long neck village After visit to long neck village, we had our lunch. It was buffet style lunch with fried chicken, rice, drink, fruit, etc. After lunch, we ride on oxford and elephant. It was a very scary experience, I was really afraid that the oxford and elephant will do something to me, or I will fall down from elephant. Scary... Elephant ride Oxford ride Lady selling drinks in water Bathing for elephant We returned to hotel and end our one day tour after visited to orchid and butterfly farm. We have our dinner nearby Chiang Mai town, famous pork leg rice. Pork leg rice(凤飞飞猪脚饭)location map Famous pork leg rice Semi-transparent hard boil egg Sunset colour egg york After rest in hotel, we went to Kalare night bazaar & Anusarn Market with Song Thaew. The journey cost 20Baht per person. Kalare night bazaar and food center location map Kalare night bazaar & Anusarn Market The things sell in Kalare night bazaar are more expensive compare to Saturday and Sunday market. We had our dinner at food court before back to hotel. Food court at Kalare night bazaar & Anusarn Market Purchase voucher before get your food Food court opposite this building Tuk tuk, a "mini" taxi in Chiang Mai, with one driver and up to 2 passengers at the back. Like combination of motorbike and trishaw, is my favorite transport in Chiang Mai. I fall in love with this vehicle after my first ride on it. It costs 60Baht for two of us from night bazaar back to our hotel in Chiang Mai city. Best to take it at night with your love one, windy windy feel... "feng" left "feng" right...romantic...I have a simple wish, you know? I just wish I can own a tuk tuk, drive here and there, or sometime hire somebody to fetch me and dear Camus "feng" here "feng" there. Too bad, the distance from night bazaar to our hotel is too short, I don't really fully enjoy and we had already arrived at the destination. Now, can someone tell me how much does one tuk tuk cost in Chiang Mai? Tuk tuk

BIG Lobster at Red Lobster | Odaiba, Japan

Last few weekend, I had a trip to Odaiba with my colleagues. That was the fourth time I visited to Odaiba, a man made island in Tokyo. It is one of the popular tourist spots in Japan, famous with shopping and entertainment district. Rainbow Bridge, Statue of Liberty, Aqua City and the Palette Town Ferris Wheel are few famous spots in Odaiba. Of course that are not the all in Odaiba. While we walk around Aqua City, we found a restaurant that is serving lobster. Looking at the display set, it was so tempting. With a reasonable price of the set, we decided to give it a try.

I am phobia to spaghetti after went for Italian buffet in Japan in year 2009, the Italian buffet came with free flow of pizza and spaghetti, somehow I guess I ate too much of spaghetti, and that caused me stop spaghetti for 5 years!

Last week, sitting in office, I suddenly smeeeell spaghetti (my brain pop out spaghetti)...then feel like eating the spaghetti that Camus cooked for me about 7 or 8 years ago. Last weekend, he cooked for me again using the same recipe.

See below for the ingredients and recipe, simple yet delicious!

ButterCake_2Butter cake is one of my family favourite cake, I used to bake it years ago with "Buttercup" or "Farmcow" butter. This few years, I found it hard to bake nice butter cake with this types of butter. I am not sure what's wrong with it, it was either my baking skill get worse? or the weather that makes the buttle melt easily? or the butter itself? I bought a 500g better quality butter to keep in fridge and plan to bake for butter cake. This time I get "SCS" butter.

When I read through some bloggers' blog, I found one recipe that is famous among many bloggers, and this method using egg separation method. I decided to give it a try.

With no regret, I am very happy with the result, I like this type of cake which gives a very fluffy texture and rich in buttery flavour. Thanks to wendyinkk for sharing Mrs NgSK's recipe. I really love it so much!!!

Ingredients:
230g salted butter, softened
150g caster sugar
4 egg yolks (grade B egg)
200g self raising flour, sifted (I used 200g cake flour+3.5tsp baking powder)
60ml fresh milk

4 egg whites (grade B egg)
50g caster sugar

Method:
1. Preheat oven to 170°C. Line bottom and sides of 8 inch cake pan with parchment paper.
2. Cream butter and sugar till pale and fluffy, scrape side and bottom of mixing bowl as necessary. Add egg yolk 1 at a time. Beat well after each addition.

ButterCake_5

3. Put half the sifted flour and mix on low speed until combined. Add milk in two additions and mix until well combined. Add in balance of flour.

ButterCake_4

4. In a separate mixing bowl, whisk egg whites till soft peak. Gradually add in 50 g sugar, beat until egg whites form stiff peaks.
5. Put half the egg whites in butter mixture and mix on low speed, pour in balance of egg whites and fold with spatula.
6. Pour batter into baking pan and level.
7. Bang baking pan on table top to remove big air bubbles.
8. Bake at pre-heated oven for 45 minutes or until skewer inserted and come out clean.

My cake has little crack on top when bake in oven for about 40 minutes, I don't really care about this as most importantly it was very delicious, look at the photo to see the cake's texture, lovely!

CranLC_1When I looked back my post on Hawflakes Layer Cake, I just realised that it has been more than one year since I last baked my Indonesia layer cake. I bought a can of butter for baking layer cake and kept until it was expired. I quickly grab it to bake for my next Indonesia Layer Cake with Cranberry.

This time, I follow exactly the recipe in my blog too, with slight modification, I change the filling to cranberries. For my hawflakes and prune layer cake, I managed to bake a total of 8 layers cake but for this one, I get only 7 layers. It was still very delicious and as good as last two cakes! I spent less than 3 hours for this cake. You can substitude cranberries with raisins too if you like as the taste of cranberries in this cake taste very similar to raisins.

SteamerRecently when we were doing house keeping, we found out that there is a unit of steamer given by Camus's mom. She bought it from Cosway many years ago but did not use it at all. We took it out from our store room and keep it at kicthen.

Last two weeks, we used it to cook for our lunch and dinner. We found it quite useful and easy to use without dirty our kicthen, hence not much cleaning job after cook except for washing the steamer part by part after use.

We first try with steam chicken with mushroon, the night before cook, we merinate two big chicken drumsticks with oyster sauce, soy sauce and pepper. To make the chicken more delicious, we added dried mushroom, red dates and ginger to the chicken on the day we cooked. Since the steamer contains three layers, we put in lady finger and corn too.

With this simple and easy cooking way, we were able to enjoy our meal, and it was so delicious.

HengThai_1We found one Chinese-Thai food restaurant few weeks ago at Raja Uda, it was not our first intention to dine there. We were hungry and looking for something good and special for our dinner, we went to Kampung Baru for our first stop, looking for Japanese food, but there was an event held at Kampung Baru causing heavy traffic jam.

We changed our dinner place to Salad Bowl at Chain Ferry, bad luck, it was closed on that day. We drove towards Raja Uda direction, Sawara steamboat get our attention and we sat in to read the menu. After 5 minutes, we walked out from Sawara due to super expensive of the meal. Finally, we went in this not so attractive but crowded restaurant.

It was already 9pm and after make order, still have to wait for another 25-30minutes. I can say that it was worth waiting as the dishes that we ordered taste delicious and very similar to Thai local taste.

That time was only Camus and myself, two persons cannot order much. One big fish, two big prawns and a plate of mix vegetable make us very full and satisfied.

This assam Africa fish taste superb, hot, spicy and sour, just like assam soup. It came with some chinese cabbage too, very appetizing. This assam big fish cost about RM28, to me it is very worth as you will get big fish with delicious soup and vegetable in it.

HengThai_3

When make order, the waiter asked is 4 big prawns enough for us? We said yes, but after that, he reduce our order to 2 big prawns. I was thinking, har? 2 prawn nia where got enough? But for first time, I thought it would be good to try 2 first, in case not delicious. When they served, I was shocked as big head prawn really big in size, luckily we did not order 4, and this 2 big head prawn cost us RM40. Gosh! If I order 4, I have to pay for RM80!! This plate of big head prawns was super delicious, sprinkle with chopped garlic and bird chili on top. They steamed with a kind of sauce, slightly sour, very special and delicious, if you ask me how the big prawn taste, I can say it tasted like lobster and crab. How good if I have the recipe?

HengThai_1

Mix vegetable, RM8 taste good too. They cooked with 4 types of vegetables.

HengThai_2

To us, this is one of the best Thai food restaurant (another one is Mae Salong in Sungai Petani). They open during lunch time too. If you are looking for Thai food, visit this restaurant and give it a try.
