Butter Cake Recipe (Egg Separation Method)

Butter cake is one of my family favourite cake, I used to bake it years ago with "Buttercup" or "Farmcow" butter. This few years, I found it hard to bake nice butter cake with this types of butter. I am not sure what's wrong with it, it was either my baking skill get worse? or the weather that makes the buttle melt easily? or the butter itself? I bought a 500g better quality butter to keep in fridge and plan to bake for butter cake. This time I get "SCS" butter. When I read through some bloggers' blog, I found one recipe that is famous among many bloggers, and this method using egg separation method. I decided to give it a try. With no regret, I am very happy with the result, I like this type of cake which gives a very fluffy texture and rich in buttery flavour. Thanks to wendyinkk for sharing Mrs NgSK's recipe. I really love it so much!!! Ingredients:230g salted butter, softened150g caster sugar4 egg yolks (grade B egg)200g self raising flour, sifted (I used 200g cake flour+3.5tsp baking powder)60ml fresh milk 4 egg whites (grade B egg)50g caster sugar Method:1. Preheat oven to 170°C. Line bottom and sides of 8 inch cake pan with parchment paper. 2. Cream butter and sugar till pale and fluffy, scrape side and bottom of mixing bowl as necessary. Add egg yolk 1 at a time. Beat well after each addition. 3. Put half the sifted flour and mix on low speed until combined. Add milk in two additions and mix until well combined. Add in balance of flour. 4. In a separate mixing bowl, whisk egg whites till soft peak. Gradually add in 50 g sugar, beat until egg whites form stiff peaks. 5. Put half the egg whites in butter mixture and mix on low speed, pour in balance of egg whites and fold with spatula. 6. Pour batter into baking pan and level.7. Bang baking pan on table top to remove big air bubbles.8. Bake at pre-heated oven for 45 minutes or until skewer inserted and come out clean. My cake has little crack on top when bake in oven for about 40 minutes, I don't really care about this as most importantly it was very delicious, look at the photo to see the cake's texture, lovely! Durian Crepe Cake Recipe

After durian butter cake, I have tried with another new type of cake, durian crepe cake. I ate my first mille crepe during my stay in Japan. From there, I get to know mille crepe, a very delicious and special cake. Last year, I ordered one peanut butter mille crepe for Camus on his birthday, and it tasted heavenly. I wanted to make my own crepe too but due to time concern, I have no chance to make one. This time, since it is durian season, I make a durian crepe. Besides frozen cheese cake, this is another type of cake where you can make it without oven. The way of making the crepe is the same as making pan cake. You just need to fried the crepe piece by piece, prepare the filling and stack the crepe together with the filling until you get a perfect cake.

 

Baked Blueberry Cheesecake

Cheesecakes are usually made with soft cheese (for instant cream cheese at room temperature), sugar, eggs, flour, and liquids. Normally, the base is crust, which may be pastry, digestive biscuit or any similar biscuit. Thin layer of sponge cake may suitable to be the cake base as well.          

 

Kuih Koci Recipe

This is my first time making kuih koci, one of my favourite kuih. It is easy to make but for wrapping filling part, I found it is a bit difficult as I can't really wrap coconut filling evenly. Here you go with the recipe. SarLaksa_3A pack of Sarawak laksa paste was brought back from my Sarawak colleague since 1 year ago. It was kept in my kitchen cabinet over a year until it hits the expiry date. At first I was thinking to throw away the paste after few months of expiry but at the end I just cook it as do not want to waste this "imported" laksa paste.

To cook Sarawak Laksa is easy but you need to prepare lots of stuffs. From cooking chicken soup until cutting vegetables and remove prawn shell, that was enough to occupy my one whole morning. But everything is so worth when I saw everyone is enjoying this imported and special Sarawak laksa that was cooked by Camus and myself.

PumpkinOther than soy milk, my smart soy milk maker can cook soup too. I used it to cook pumpkin soup during my weekend, at the same time, I cook vegetable and other dishes for my lunch.

To cook pumpkin soup with soy milk maker is very easy. Just cut pumpkin to small cubes, together with onion, tomato, dried shrimp and some mushroom. Dump everything inside the soy milk maker and add in water. Select "thick soup" button and the machine will blend and cook the soup for you. Add salt to the soup before serve.

With this simple steps, you will get a hot and fresh soup from the soy milk maker. You can add those ingredients that you like and quantity is according to your own taste. Do not add too much ingredient at once into the soy milk maker to prevent leakage.

SoyBeanThis recipe is almost same to Soy Milk recipe except that it uses black bean to replace half of the soy bean.

Ingredients:
1/2 cup Soy bean
1/2 cup black bean
1 little Water
2 tbsp Sugar (add more if you like sweet)

Method:
1. Soak soy bean and black bean overnight for 6 hours.
2. Remove soy bean and black bean skin.
3. Wash and pour into soy milk maker.
4. Add water.

Claypot5After 5 days work, you will be happy to welcome your weekend, but two days weekend are too short for us to say bye bye to our tiredness. Normally, one day weekend will be spent for family and we will left only one day rest. To prevent get more tired, we cook a very simple meal for lunch and dinner during last weekend.

1340414818645Konnyaku jelly is a "QQ" type of jelly. I made this during our house party. This is a favorite dessert that my little niece likes to make.

To make this, just follow steps at the pack. First, mix konnyaku powder with sugar. Boil a pot of water, when the water is boiled, slowly pour in konnyaku and sugar mixture, stir the mixture at the same time. Get ready jelly mold and your favorite fruits. When jelly is boiled, pour into jelly mold. Remove jelly fom mold when they are completely cool. Keep in fridge before serve.

This is a very easy recipe. Mix flour with water and stir until you get smooth liquid but little thick mixture. Add a pinch of salt to the mixture. Cut chinese chives to 2 inch long and add into the mixture.

To fry, put some oil into frying pan, pour a scoop of mixture and fry until you get nice golden colour on both sides. Serve hot with cup of coffee for breakfast or afternoon tea!
