Organic White Bitter Gourd / Bitter Melon 白苦瓜

Recently, during our visit to my uncle's farm, we get to know a new type of vegetable, bitter gourd in creamy white colour. It was an organic bitter gourd that did not use any fertilizer. My uncle gave one to mom for take away!

Apple + Breast Milk | Baby Food for 6 Months Old

When baby more than 6 months, I started to think what to serve her besides breast milk. The first thing I make for her is steam apple with breast milk. Ingredients:AppleBeasts milk Method:1. Peel apple skin, cut into small cube. 2. Steam apple in boiling water until soft.   3. Mash with spoon.4. Mix well with breast milk.   I am very happy to see her grow healthily with food I make for her. Although breast feeding journey is tiring, but everything is worth when see her growing up with my own breast milk.

 

Baked Mooncake Recipe 公仔饼/猪仔饼

My mother usually will buy home made mooncake (gong zai bing) from her friend every year. This year her friend does not make the mooncake to sell, so we make it ourself. It is not difficult to make this gong zai bing, we get ingredients and recipe from one of the ingredient shop in Penang. The sales person recommended us to use pure peanut oil as our cooking oil is not a pure peanut oil, they added a kind of essence to make cooking oil. I do not know how true it is, but from the price, they have so much difference in "real" peanut oil (RM11 for 500g) compare to our cooking oil. We also bought cake flour from her to make the mooncake but according to her, any medium protein flour will do. Recall back last year, I used low protein flour to make gong zai bing. Golden syrup is expensive too, RM11.50 for 1kg.  Ingredients:500ml golden syrup200ml peanut oil15ml lye water700g medium protein flour/cake flour Method:1. Mix golden syrup, peanut oil and lye water in big bowl until combine.2. Sift in flour and mix until combine. Do not overmix to prevent mixture become hard.3. Cover bowl and leave for 6 hours or overnight. (compare with my last year recipe, which need to leave for 2 hours only, the sales person said 6 hours will let the flour absorb oil/golden syrup fully and give the mooncake better taste)4. Preheat oven at 180C for half an hour.5. Divide dough to 40g each and roll it round, lightly press with palm to flatten it.6. Bake in oven (fan-forced) for 12 mins or until cooked. The gong zai bing smell and taste really good after baked. It is best to keep and consume after 3 days, as when the biscuit just out from oven, the texture is not soft yet. I will keep this recipe for future use. The same recipe can be used to make traditional mooncake (wrap with filling) too. BreadMaker_6_copyThis is a new bread maker that I bought some times ago. After the first unit of bread maker that I bought from Cosway, this is the 2nd unit that I bought from there. It is mom's birthday present.

The new bread maker comes with more functions compare to the first one, and it can make bigger loaf. The additional functions that attract me are "bake cake", "make jam", "bake only". I am not sure how delicious the cake is if you bake with bread maker. Well, I will try it! The "bake only" function is good where you can let the machine prepare the dough at first, and then remove the dough from machine and roll it to small ball (add some filling too), then put back to the machine for "bake only", so you do not need to always make a "Gardenia" or "High 5" bread, and it does not required oven.

Kneading process

Another attractive point for this new breadmaker is the "process indicator" function. The machine will indicate what process is running at that moment. Look carefully at the small black arrow that pointed "bake". You will clearly know what the machine is doing at that moment.

I have tried with white pan bread with this machine, the bread came out nicely from the breadmaker. Well done! I am satisfied with the new breadmaker.

Hello Phoebe Sukanya,
the function of timer is to delay the bread making, if you want to make it on the spot then you no need timer. Timer 2 hours meaning the bread will start make after 2 hours, which mean delay to start the bread making, is this clear?

Hi, empress bread maker is my first bread maker, i hd totally no experience on bread making. After read the instruction book, i not 100% can understand how to use it.

Lets say i choose programme 3, should i still need to set the timer? What different we use timer and choose the provided programme?

Hi, I use medium color, bread turn out will be darker,you can try medium or dark color if you prefer darker color. Which recipe are you using?

Anyway, I just like to know why your loaf brown nicely on the top. The few that i'd made are brown by the side but white on top. Mine are dry & not soft. Pls advise, TQ

Hi Elaine, yes, both blades shd be rotating as well. Make sure you fix blades correctly, not up side down. If face problem, bring it back to the place you bought. :-)

Knowing that you also owned one Empress Breadmaker from Cosway. Both the kneading blade shoud be moving when making the dough right?
I just bought a unt from Cosway. Without the pan fix both the motor turning but after putting the pan & the kneading blade only one side is turning.
