Almond Nibs Biscuit Recipe

If you like almond and crispy type of biscuit, you will like this recipe. This is a very easy recipe with very simple ingredients. Do this especially when you have left over egg white as this recipe calls only for egg white without egg yolk. I will share the recipe with one egg white, just multiply the recipe with number of egg white if you want to do more.

Today after work, I went to take dinner with my colleagues. We went to a restaurant nearby company to have the dinner, it is called Coco’s (ココス). After about 20 minutes walk from company, we reached the restaurant and start our dinner.

Camus and I took a day off from our busy life to enjoy our own sweet time. He brought me to this cafe located at Lebuh Macallum. He told me we can have our breakfast with coffee and bread kind of breakfast which I like. We arrived there on weekday morning around 10:30am and the cafe was very empty, only one customer during the time we were there. Plenty of parking space outside the cafe. Cakes at RM13 per piece! After enter the cafe, a young man passed us a menu, we seated and read through the menu. I was shocked when look at the menu and do not know what to order at the first glance, I focus on the price and feel hard to choose my meal as they are very expensive to me. In the end, we get one Macallum breakfast and Smoked Salmon Bagel, one cafe latte and one cappucino, there gone our RM55! Talk about the cafe, I found this cafe is quite nice as the fragrance really attracted me when I first enter the cafe. I like the fragrance and it is quite different with other cafe as I can smell something soury. I am not sure what is this fragrance until I get my latte and cappucino. The sweet aroma of coffee taking over my senses, they are creamy, smooth coffee I longed for. Cappucino and Latte Maccallum breasfast came with sunny side up, avocado, chicken frankfurter, chicken bacon, grilled capsicum, baked potatoes, bread and salad. Portion is quite big. I like the chicken frankfurter which the size like german sausage. Smoked salmon bagel came with smoked salmon with wasabi cream cheese, rocket leaves and pinch of capers. I do not understand most of the terms mentioned in the menu except for "smoked salmon". Now as I am writing, I compare the menu and photo I took, I cannot find "wasabi cream cheese" from my photo, why? Mana dia pi? Oh, the one spread between the bagel? It's wasabi cream cheese? Not butter? To me, this smoked salmon has nothing special but I do like rocket leaves. And now I know what is capers, it is the small tiny things appeared on top of the roll smoked salmon. Ooppsss, we do not finish that even though only served with 3 biji, what a waste? I thought they were just a decoration to the smoked salmon... Overall, Macallum Connoisseurs Cafe is a good place to enjoy coffee but sincerely, it was a very expensive experience to me. Kuro Goma Ice Cream | Japan Yokohama

During our visit to Japan Yokohama China Town, we noticed a black colour ice cream. It is now winter season in Japan, but the cold weather does not stop us from trying this unfamiliar colour ice cream. It is a black sesame flavour ice cream which cost 260 yen. Kuro means black and Goma means sesame in Japanese.

DurianCrepe_8After durian butter cake, I have tried with another new type of cake, durian crepe cake. I ate my first mille crepe during my stay in Japan. From there, I get to know mille crepe, a very delicious and special cake. Last year, I ordered one peanut butter mille crepe for Camus on his birthday, and it tasted heavenly.

I wanted to make my own crepe too but due to time concern, I have no chance to make one. This time, since it is durian season, I make a durian crepe.

Besides frozen cheese cake, this is another type of cake where you can make it without oven. The way of making the crepe is the same as making pan cake. You just need to fried the crepe piece by piece, prepare the filling and stack the crepe together with the filling until you get a perfect cake.

So, let's go to the ingredients:

For crepe:
200g plain flour
3 eggs
3/4 tsp salt
3 tbsp sugar
400ml milk
3/4 tsp vanilla essence
70g melted butter

For filling
450g durian fresh
150ml whipping cream

For crepe:
1. Mix all ingredients for the crepe together until get a smooth runny batter. Strain and rest the batter for 1 hour.

2. Heat up a non-stick flat based pan on medium heat.
3. Grease it with some butter or oil.
4. Pour in a scoop of batter and cooked until the crepe is firm, flip to another side and cook for a while.

5. Repeat step 3-4 until finish all the batter.
6. Leave the crepe to cool down on plate.

For filling:
1. Remove seeds from durians.
2. Mash durian fresh with a fork till creamy.
3. Whip whipping cream till stiff. Add in the durian fresh and mix till well combined.

4. Put a piece of crepe on a cake board, add in the filling and flatten with a palette knife. Stack another piece of crepe on top of filling and continue with filling until all the crepes finish stacked. Chill the whole cake in the fridge.

5. Remove from the fridge and rest at room temperature for 15 minutes before serving.

The crepe I made is quite thick, the filling I used for each layer is too little. I personally think that it is better to make the filling the same thickness as the crepe, so you will have a nice and creamy crepe.

I wrap the remaining filling with remaining crepe to make durian kuih. They are very creamy and delicious too.
