Durian Crepe Cake Recipe

After durian butter cake, I have tried with another new type of cake, durian crepe cake. I ate my first mille crepe during my stay in Japan. From there, I get to know mille crepe, a very delicious and special cake. Last year, I ordered one peanut butter mille crepe for Camus on his birthday, and it tasted heavenly. I wanted to make my own crepe too but due to time concern, I have no chance to make one. This time, since it is durian season, I make a durian crepe. Besides frozen cheese cake, this is another type of cake where you can make it without oven. The way of making the crepe is the same as making pan cake. You just need to fried the crepe piece by piece, prepare the filling and stack the crepe together with the filling until you get a perfect cake.

Today, let us tell you more about the Yam Rice at Soon Hing Kopitiam.

 

Pandan Chiffon Cake Recipe

This is a long keep recipe that I baked few months ago. Baked it together with other chiffon cakes during my chiffon cake study. I get this recipe from Kitchen Tigress, I found her blog from youtube while I was searching for video on how to make chiffon cake.       Recipe 100g pandan leaves, use only soft and moist young leaves 70g freshly squeezed coconut milk, undiluted 180g egg whites ½tsp cream of tartar 50g sugar 60g egg yolks 50g sugar 60g corn oil ¼tsp salt 100g cake flour (sifted with baking powder) 1tsp baking powder Method 1. Blend pandan leaves with coconut milk and 1 tbsp water. Strain pandan leave and get green liquid. Set aside green liquid, which should weigh 95 g. 2. Add sugar into egg yolks, immediately whisk with hand whisk until pale and light. 3. Add in corn oil, mix well. 4. Add in green pandan coconut liquid, mix well. 5. Sift in flour, baking powder and salt, stir until well combined. 6. Whisk egg white with electrical hand mixer until big bubbles form, add in cream of tartar. 7. Continue whisk from medium to high speed until small bubbles form (egg white is white in colour now) . 8. Slowly add in sugar, continue whisk at high speed until soft peak formed. 9. Add 1/3 of meringue into egg yolk mixture, mix gently with hand whisk until well combined, you will get a light mixture. 10. Change hand whisk to spatula, fold in 1/2 of remaining meringue. GENTLY fold with egg yolks batter until 50% combined (you will still see white meringue now). 11. Add all remaining meringue and fold GENTLY with spatula again until well combined. I did in in this way: spatula cut mixture into center all the way to bottom bowl, scrap from bottom along bowl side toward you. Rotate bowl few degree and repeat this action until well combined. (your mixture should be very light and volumic now). 12. Pour batter into 18cm chiffon cake pan, level the surface. Bang mixing bowl against worktop 2-3 times to remove air bubbles. Run a chopstick round side of tin to remove more air bubbles. Level and smooth top. Bake in preheated oven at 160C at lowest rack with fan forced for 40-45 minutes.   13. Remove cake pan and invert pan immediately, cool completely before remove cake from pan. Result The cake should be evenly green but I saw some white spot, it was due to unbalance mix during step 11, meringue not mix properly with egg yolk batter. Compare with other recipe which I used 5 eggs, this recipe used only 4 eggs. It is shorter compare with 5 eggs chiffon cake on right (picture below). I prefer 5 eggs recipe. Merry Christmas 2015! We had four days holiday on this year Christmas, a super happy holiday mood to welcome this year Christmas. We celebrated our Christmas at The View Restaurant, with their semi-buffet menu that can opt for either Turkey or Lamb for the main course. We get one Lamb and the other was rib eye steak that not in the menu. Before the soup was served, we started with the buffet. Not much choices but some of them taste really good. They have salad, fingers food, fruits, and more. Desserts were one of my main focus, their tiramisu is one of the best that I had ever ate. Desserts and fruits: Parsnip cream soup The main course tasted delicious especially the lamb, very soft and juicy. BelgiumWaffle_3I love to eat waffle especially when the waffle just comes out hot from waffle maker and waffle with peanut butter is always my first choice. I have even tried to make my own waffle with my sister in law's waffle maker which bought from Cosway. My homemade waffle didn't turn out as good as those sell outside. To me, good waffle should be crunchy outside and soft inside. Of course the taste should be delicious too.

Recently, I get to know about Belgium Waffle after my first try in Osaka Railway Station, Japan. The strong fragrance from the waffle store caught our attention. We bought a piece of plain waffle which costs 126 yen (about RM4.50). The Belgium waffle was very crunchy and tasted heavenly!Cool

I found that the Belgium waffle dough is different compare with normal waffle dough. Look at the dough from the photo below. They are not the same as usual liquid waffle dough.

I managed to get another piece of Belgium waffle from Tokyo for the same price. This is the outlook of the packing. Somehow, they are not as good as the fresh one.Frown

They have other flavors too, such as chocolate, mapple, rum raisin, almond, strawberry chocolate, white chocolate and etc. but I have never try them yet.

I will try to search for Belgium waffle recipe and try to make my own at home.
